You know what they say:
Give a man a fish and he eats for a day. Teach a man to prepare that fish with lavender-calabaza mousse and bacon powder and, well, it’ll taste better.
Here to do both things is Shikany, your beautiful new go-to restaurant for a fine, fine dinner but also maybe a class on molecular cooking—now taking reservations for its April 11 debut in Wynwood.
Stepping into the cavernous space is like walking into the modern, sexy version of The Princess Bride’s Fire Swamp... with crystal chandeliers and shiny three-dimensional modules running floor-to-ceiling. (We did say it was the modern version.)
Anyway. Before grabbing a seat near the open kitchen, you and your date will step into the garden lounge for some wine and strategic planning. With plates like Cognac Vanilla Waffles and Goat’s Brie Spring Rolls asking for attention, it’s going to take a team effort if you’re going to get to the Maple Syrup Braised Wild Boar Cheeks. And nobody should miss out on boar cheeks.
As for next time: round up 23 friends. Commandeer the 24-seat communal table. That’s where they serve an eight- to 18-course tasting menu Thursdays through Saturdays.
Or if you’re feeling especially DIY, check out Shikany’s on-site culinary school—where you could enroll in the pastry curriculum, or maybe take a mixology course.
This is the good kind of homework.
