You may remember Dustin Hoffman in a dress playing this role-within-a-role. Well, apparently the man himself was also the first patron of Brentwood’s Baltaire. So as the Los Angeles restaurant celebrates its first year in business with a new drink menu, it decided to whip up something special to honor the gin-loving actor.
This rose-tinted cocktail begins with a base of gin, Aperol and St-Germain elderflower liqueur. From there, it’s all freshened up with some citrus and a float of champagne. In a word: grand.

1 oz Tanqueray No. Ten Gin
1/2 oz Aperol
1/4 oz St-Germain
1/4 oz lime juice
1 splash grapefruit juice
Shake all ingredients with ice and strain into a rocks glass with one large cube. Top with champagne and garnish with a lime twist.
