Due to Maple Block Meat Co., a true-blue barbecue spot with an in-house butcher behind your ribs, opening Monday in Culver City.
Damn fine abode for meat consumption here. On the left, a white-tile-backed, gleaming blond-maple block counter where your peachwood-smoked spare ribs, pork shoulder and brisket are hewn. On your right, that same counter in black, backed by red brick, where beer gets poured. (Fathom the ying-yang-ness here.)
Somewhere amongst all of this, you’ll glimpse a Bazaar/.ink vet who long butchered alongside Lindy and Grundy. Man’s mighty particular about his meat, preferring to carve it from superior-quality whole animals. All so you’ll be like, “That’s amazing.”
For lunch, you could do some ribs or a pimento sandwich on their nice flank-side patio. Or order brisket by the pound to take home.
At dinner, you’ll find bigger stuff. Like smoked bone-in prime rib and pork shank. So hang out, knock one back and listen to Johnny Cash and KRS-One.
Those guys really should have cut an album together.
