Peer into Proof Pizza & Pasta, a casual new Neapolitan pizzeria from some DBGB and Gramercy Tavern vets, opening tonight in the former Copperbox space in Midtown. (See the slideshow here.)
Copperbox. You remember it. That invite-only dinner spot. Well, it’s no more. But it is where the guys behind Proof have come to do their thing.
What that thing is: Neapolitan pies baked at 900 degrees in a wood-burning oven. One that you can supervise from a giant glass window inside.
Your goal: secure a seat at the communal table and bar. Ask for their white pie topped with fontina, mozzarella, ricotta and parmesan. It’ll take about 90 seconds. Which should buy you just enough time to procure a Caramel Cream Ale from Due South on draft and mention the macaron ice cream sandwich for dessert.
Oh, and that palm-lined patio you’re spying out back—it’ll be ready soon. Right in time for winter.
