Complex cocktails involving two or more base spirits once thought of as independent players. Yes, today's bartenders can't help but cross their streams, seeking greater complexity and character by mixing rum and gin. And tequila and cachaça. And so on and so forth.

"We have been playing with this a lot over the years to find ways to open new doors to flavor combinations," Melrose Umbrella's Zach Patterson explains. "Sometimes you will find the most unlikely pairs go amazing together. Which goes without saying, sometimes they definitely do not."
