Out of earshot of all the attractive faces assembling next to the silver buckets of chilled wine along the 16-seat marble bar. You don’t need the public’s thoughts on a Big reboot. Yet.
Someone will bring up talent. You’ll mention that the guy pairing your rockfish crudo with your Central Coast riesling was the wine director at Providence. And that the Patina vet behind your honey-lavender squab, escargot toast points and lamb loin with smoked almonds was also Café Pinot’s executive chef. Inevitably, the role will go to Kevin Hart.
Dinner will wind down. Foie gras flan will appear. A server will offer everyone herbal tea made from fresh leaves clipped tableside. Something will be considered officially green-lit.
