It’s back. The State Fair of Texas. Three weeks dedicated to eating a bunch of fried things that probably have no business being fried. So to assist in this noble endeavor, we took the liberty of rounding up some new comestibles worth your time and tickets. Now go forth and conquer.

Deep-Fried Chocolate Chip Burrito

Deep-Fried Chocolate Chip Burrito

What It Is: Chocolate chip cookie dough crammed inside a flour tortilla and fried. For garnish: extra chocolate and whipped cream. Right, so it’s not Tex-Mex.
Drink It With: Ice-cold chocolate milk. From a bendy straw.

Deep-Fried King Ranch Casserole

Deep-Fried King Ranch Casserole

What It Is: Imagine an entire King Ranch casserole (the cheese, the cream, the bread crumbs). Good, now imagine it fried to a golden brown and shaped like Texas. Because Rhode Island would’ve been too small.
Drink It With: A Shiner. Maybe two Shiners. But definitely Shiner.

Deep-Fried Thanksgiving Dinner

What It Is: These breaded spheres are filled with roast turkey and stuffing, deep-fried and served with a side of gravy and cranberry dipping sauce. Just a little walking-around snack.
Drink It With: Something simple like water. Or something like eggnog from your flask.

Deep-Fried Spaghetti and Meatballs

Deep-Fried Spaghetti and Meatballs

What It Is: A browned cheddar biscuit stuffed with pasta, meat sauce and mozzarella. It’s similar to what you’d eat in Tuscany. If there were a traveling carnival in Tuscany.
Drink It With: Some wine in the Wine Garden. Chianti if they’ve got it. Whatever if they don’t.

Deep-Fried Nutella

Deep-Fried Nutella

What It Is: Nutella and cream cheese are whipped together to create some sort of hybrid super-frosting. Then that’s all spread onto phyllo dough and fried in piping-hot oil. Be sure to blow on it.
Drink It With: A cup of coffee. Strong as you can find.
