Speaking of Kapnos. You may remember that it’s spit-roasting whole animals. Well, that’s what’s getting sliced up and going on the sandwiches here in this quick-serve dining room. So you might want to pop in for a spring lamb gyro. Or a suckling pig hoagie with mustard greens and provolone. Or a breakfast sandwich known as the Jersey Mac, made with duck egg and ham on a duck-fat English muffin.
Then, next week, you’ll want to make a reservation at night and take a seat among the brick, wood and graffiti. That’s when he’s turning things into an Italian dining room with a $40 tasting menu (and only a $40 tasting menu). Think bread-crusted bass, eggplant-stuffed pasta and salami.
Which you could still turn into a really weird sandwich.
