Well, that dream is finally coming true—at Union Bear, a new joint from the Eno’s Pizza guys, where you can eat fried-chicken sandwiches and make your own beer, opening this Thursday.
To reach Uptown’s first so-called nanobrewery (a tiny, neighborhood brewery), you’ll head down a couple stairs near Taco Diner. You’ll step into a basement beer lab with exposed pipes along the ceiling, a massive bear drawn on the wall and long beer tubes running behind the 40 beer taps.
Sure, you could settle into the low-lit side room, wrapped in pinewood, and discuss the pros and cons of IPAs over a Canadian Tuxedo pizza with bacon, pineapples and jalapeños.
But not this Thursday—no, fantasies are being fulfilled that day. You’ll drop by with a top-secret homebrew recipe in hand. Assuming the brewmaster approves your hoppy concoction (and he will), the place will begin brewing your beer in house. At which point, you can come here and order your own draft straight from the tap.
