Lobster Roe Ice Cream

Mandalay Bay’s seafood outpost is taking things to a strange, strange place, with 29 obscure ice cream flavors like foie gras, basil, black truffle and, yes, lobster roe. You can get 16 scoops of your choosing with their ice cream tasting menu—but you’ll have to smuggle in the chocolate sauce on your own.

Sneak off to the right side of the house bar and you’ll find Red Square’s secret back room, where you can cool off among more than 200 rare vodkas and one frozen metal sculpture of Lenin’s head. As a tribute, all your friends will be chilled as equals.

The MGM’s futuristic Mexican spot has put together what might be the perfect high-tech spiked summer treat—at least until they work out the cold fusion shandy. It’s a frozen cocktail in a salted margarita glass, with a stick attached for if you decide to venture outside for a poker game. Nothing intimidates your rivals like a popsicle.
