When we say “Fermentation Lab,” you say:

Damn, you didn’t say “beer.” You were supposed to say “beer.”
As in the kind that’s in ample supply at Fermentation Lab, a new happy-hour-friendly place that, yes, has plenty of beer, but also specializes in “the oldest form of cooking” otherwise known as fermentation. It’s now open (but sadly closed on Mondays) and we have the slideshow to prove it.
This Mid-Market beer haven was started by a guy they call the Beer Chef. It’s on his birth certificate and everything. It’s not, but isn’t pretending fun? We should move on.
As you and some friends enter after work, note those jars of pickled things on the shelves. You’ll be having some of those later. For now, grab a spot at the steel-backed bar, or in the lounge area, or at a high-top table in the recessed area opposite the bar. Point is: options.
You’ll obviously want to sample some of their 24 beers, all from California breweries like Bear Republic and Fieldwork. The very things that pickles and duck confit sliders and brisket burgers were born to be served alongside.
They live a simple life.
