This is not a humble, “let’s just take it easy this year” New Year’s dish. It’s toasted brioche, stuffed with lobster salad, topped with golden osetra caviar and surrounded by a champagne sabayon. It’s served to you on a marble slab, with the requisite glass of champagne.
