In a more perfect world, every deli would have a wine bar full of hush puppies in the back.

This is a good start.

Behind door number 1: The Backroom, a veritable wine-and-charcuterie playground hidden behind Moody’s Delicatessen, opening tonight in Waltham. (Here’s your slideshow.)

Let these truths be known:

You enter through a carnivore’s paradise.
Moody’s Delicatessen crafts legendary pastrami sandwiches. And provides charcuterie to the likes of Townsman, Trade and Area Four. Now, it’s the gateway to your next meat-forward date night.

“Sturdy” comes to mind here.
Stone and steel walls. Marble four-tops. A three-sided bar made of poured concrete. This place won’t break easily.

Wine. You’ve got options.
You could go with one of two tap options. Or one of 16 bottles by the glass. Or something from the part of the list marked “The Holy Grail,” like a $2,000 bottle of ’04 Screaming Eagle. It’s the non–Indiana Jones type of holy grail.

They have 60 types of charcuterie.
Which will change daily.

And non-charcuterie things, too.
Smoked brisket. Hush puppies. Housemade “bugles” made from cornmeal, dusted with truffle salt and served as a bar snack.

You can still put them on your fingers and pretend you’re a witch.
