Welcome to TD Burger, a new palace of red meatiness from Top Chef alum Timothy Dean, opening Monday just north of Union Station.

This is a counter-service spot, but not the kind where you’ll grab a tiny burger to go. No, you’ll need more time to attack these half-pound behemoths, which get rubbed with a 22-spice blend and flame-grilled.

To begin: stare at the wooden menu board. If you’re feeling epicurean, go with the Jean-Louis (foie gras, rhubarb, black truffle aioli). If you’re feeling historical, there’s the Thomas Jefferson (fried egg, muenster, bacon).

Another good reason to hang around: grabbing a high-top in view of the five TVs on game day, and summoning a cocktail waitress for one of the six drafts and 60 bottles.

And as long as you’re in it for the long haul, might as well branch out from all the burgers. Right into Moroccan BBQ wings and deck-oven pizzas like smoked salmon with dill cream cheese and arugula.
