Now, you can call ahead for reservations, or just pop in and grab a red suede stool at the bar. The head barman, Dub, is a Bolsa alum, and he makes his drinks (like the bourbon-powered Just Business) with bitters in flavors like chocomole. Once sated, your next move is to the brown leather sofa hidden away in a corner nook. There, summon the barkeep, who will wheel over a silver cart stocked with booze. Request a Phil Collins with gin, black pepper dust, basil and soda.
