Every night, four lucky diners can eat at the counter overlooking his open kitchen—he'll prep 20 courses of small bites like Slow Cooked Egg With Bacon, Rabbit Tortellini and Butter-Poached Lobster. On second thought, better reserve all four seats for yourself.
