Your needs this week are few, but they are specific: pounds of protein, preferably briny and smoky. Enter Hill Country, prepping holiday hams and briskets by the pound along with sides like baked beans with burnt ends and sweet-potato-bourbon mash, for pickup or delivery. You didn’t want to go out anyway.
