Chef-owner Ralf Kuettel is staging the Swiss Metzgete feast at his Chelsea bistro to show New York how to do a harvest feast right. Apparently the trick is using every last bit of the annual pork supply, and reaping the rewards in the form of festival-sized plates of braised pork belly, boudin noir and homemade bratwurst. Ah, culture.
